Slow Cooker Pork Ribs

All I have to say is... thank goodness for Slow Cookers! Between crazy, busy work and travel schedules (Amy was gone most of November!), the hustle and bustle of the holidays, weekend obligations and fun, and the normal weekly grind of gym and errands, there has not been much free time to devote to cooking and baking... let alone blogging. This makes me sad. :( I miss sharing my kitchen adventures.

Thankfully, our 'Slow Cooker Sundays' have allowed us to try out a few new recipes since we can quickly prepare a meal, then let it cook all day, and not necessarily have to be home. Last weekend, Amy and I had our first visit to an Asian Market... and it was AMAZING! Live lobster and fish tanks, aisles devoted just to soy sauce, lots of fresh vegetables I had never seen OR heard of before, and so many versions of noodles. We got inspired browsing the endless aisles of Asian ingredients and decided to grab some pork ribs and Korean BBQ sauce to throw into the slow cooker. Along with our rib-fixin's and some other fun Asian goodies (mochi, yuuuuum), we also grabbed a pack of fresh yakisoba noodles to serve on the side of our pork ribs. Back to the Slow Cooker Pork Ribs.... OH WOW, these pork ribs turned out absolutely amazing. The meat was so tender and juicy it was falling off the bone! The slow cooker method to tenderize and pre-cook these pork ribs works perfect. And it's so easy; no oven needed and a quick and easy clean-up. I will always use my slow cooker for ribs from now on!

You could use any BBQ sauce for these Slow Cooker Pork Ribs, but we used Korean BBQ sauce. They turned out super flavorful and spicy! Great paired with a cold beer too...

Slow Cooker Pork Ribs
based on a recipe from
makes about 4 servings

4 pounds pork ribs, trimmed
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon onion powder
1/3 cup brown sugar
1 clove garlic, minced
1/2 cup green onions, chopped
2 teaspoons liquid smoke
1 cup water
1 (18 ounce) bottle barbeque sauce (any kind works!)

Mix salt, pepper, onion powder, and brown sugar in a small bowl. Rub mixture on the top and bottom of pork ribs.

Pour liquid smoke and water into slow cooker. Layer the ribs into the slow cooker. Top the ribs with garlic and green onions.

Cook on High for 4 hours (or Low for 7 hours).

Preheat oven to 375 degrees F (190 degrees C). Transfer ribs to a foil-lined baking sheet. Discard onion and garlic. Coat ribs with barbeque sauce.

Bake in preheated oven until the sauce caramelizes and sticks to the meat, 10 to 15 minutes.

Then EAT! The pork is so juicy and tender... amazing, just amazing! 

These Slow Cooker Pork Ribs will now be in regular rotation for our Sunday dinner. Loved the Korean BBQ sauce on them, but excited to try some other versions of this delicious dish too...
