Spaghetti Squash with Sausage and Greens

Fall is the perfect time of year to grab a spaghetti squash at the market and make one of these warm, one dish meals... Spaghetti Squash Pizza BoatsBaked Spaghetti Squash and CheeseSpaghetti Squash Chicken AlfredoMushroom and Spinach Spaghetti Squash, or (the newest addition) Spaghetti Squash with Sausage and Greens.


If you have never tried spaghetti squash before, do it! The strands of the the inside of the spaghetti squash mimic pasta so well, you will think you are eating a big dish of Italian indulgence. In reality, you are eating a much healthier dish... spaghetti squash is low-fat, low-calorie, low-carb, and it tastes delicious!


This Spaghetti Squash with Sausage and Greens is based on a recipe from RachelRayMag.com. I used a low-calorie chicken sausage instead of sweet Italian sausage (I think any sausage would be good!), added mushrooms and topped the dish with crumbled reduced-fat feta. DELICIOUS!


This warm, pasta-like spaghetti squash dish is both healthy and satisfying! You won't even miss the real "spaghetti"...

Spaghetti Squash with Sausage and Greens
based on a recipe by rachaelraymag.com
makes 4 servings

Ingredients:
1 spaghetti squash, halved lengthwise
1/3 cup grated parmesan cheese
Salt and black pepper
1 1/2 teaspoons extra-virgin olive oil
12 ounces chicken or turkey sausage (any kind)
3 cups baby spinach
4 ounces mushrooms, sliced
1/2 teaspoon crushed red pepper
1/4 cup crumbled feta cheese, reduced fat

Directions:
Place a squash half, cut side down, in a large, microwavable dish. Add 1/2 cup water and microwave until tender, 10 to 15 minutes. Repeat with the remaining squash half. Discard the seeds. Using a fork, comb the squash into strands into a bowl.


Drain any excess water but patting lightly with a paper towel. Toss with the parmesan and season with black pepper.

Meanwhile, in a large skillet, heat the olive oil over medium-high heat. Add the sausage and mushrooms, season with salt and pepper. Cook until sausage is no longer pink, about 5 minutes. Add the spinach and crushed red pepper and cook until wilted, about 2 minutes.


Heat the bowl of squash strands in microwave, about 1 minute. Serve sausage and spinach mixture on top of the spaghetti squash, then top with crumbled feta cheese.


YUM!!! We really enjoyed this Spaghetti Squash with Sausage and Greens dish. It was light, yet very filling and satisfying...
