2013 Favorites!

Well 2013 was full of its ups and downs as most years are, but one thing remained constant... my passion for fitness and food! I am especially thankful for the time I had during the year to focus on cooking, baking, and sharing of recipes! Since I had some extra quality time with my food mentor (and mom), I feel like I was able to learn, grow, and come into my own in the kitchen. With that being said, I am looking forward to many new food and kitchen adventures in the New Year...

And looking back, I must say, we created and tried some delicious recipes in 2013!!! It was a really fun year in the kitchen.

This super easy one-dish meal has become a weekly dinner in our house. Amy said to me, "that's probably the best thing you've ever made for dinner". You can mix it up with different veggies too... so good!

I make this dish once a week now.... and then I eat it for dinner and take leftovers for lunch. Sometimes I will mix in chicken or vegetables. It's a delicious, healthy one-dish meal that makes EXCELLENT leftovers. I would probably eat it every day if I could!!!!
