Crispy Kale Chips!

This blog is dedicated to the "superfood" KALE! Kale is a leafy green vegetable that is nutrient rich, has many health benefits, and delicious flavor. It's low-calorie, low-carb, has antioxidant and anti-inflammatory properties, and is full of calcium, potassium, and Vitamin K, C, and A. You can't go wrong with this veggie!! 

I like kale... but other than using it in the occasional salad or smoothie, I just don't eat it that often.  I had seen some recipes on for roasted/crispy kale which turns out like a chip or 'snack food', so I decided to try it out.

To prep the kale leaves for the Crispy Kale Chips recipe:

First, wash the kale. Remove the leaves from the tough stems and tear them into large pieces.

Lay out on a paper towel to dry completely.

Crispy Kale Chips with Lemon and Parmesan
Serving Size: 2-4 as a snack

1 pound kale, leaves removed from tough stems and torn into large pieces
2 tablespoons extra virgin olive oil
1/4 teaspoon salt
3 tablespoons freshly grated Parmigiano-Reggiano

Preheat oven to 300 degrees. Line two baking sheets with aluminum foil.

In a large bowl, using your hands, toss kale leaves with olive oil until evenly coated.

Arrange kale in a single layer on prepared baking sheets and bake for 25-30 minutes, until leaves are completely crisp but not browned.

While leaves are still warm, sprinkle with Parmigiano-Reggiano, salt and a squeeze of lemon (go very easy on the lemon...a little goes a long way). Taste and adjust seasoning if necessary. 

Transfer to a platter and serve.

These kale chips are SO addicting! Salty, crispy, crunchy, and light as air.... they are the perfect healthy snack food.

(But I will warn you, kale is not a vegetable that everyone loves. Hence... these Crispy Kale Chips are not something everyone is going to love either, lol.)

I polished off half the batch as soon as they came out of the oven. Now this is a YUMMY and easy way to get my servings of Superfood Kale in!!!
