Slow Cooker Shredded Chicken

Beginning tomorrow, I have an 8-day stretch at work to get through. I decided I'd do some food prep on my day off so that dinners are quicker and easier this coming week.  Since shredded chicken works in all sorts of recipes, having it in the fridge and ready to go makes dinners a breeze!  And not to mention, it's super easy to make... I just threw some frozen chicken breasts and a couple ingredients in the slow cooker to cook while I ran errands.

Slow Cooker Shredded Chicken

4-5 boneless, skinless chicken breasts (I use frozen)
1 14 oz. can low sodium chicken broth
2-3 cups water
2 celery stalks, leaves included
1 tsp. crushed garlic
1/2 tsp. onion powder
1/2 tsp. fresh ground pepper

1.  Place chicken breasts in the slow cooker.  Pour in 1 can chicken broth.  Add 2-3 cups water until the chicken is completely covered.  Add celery stalks, garlic, onion powder and ground pepper.



2.  Cover, and cook on High for 4 hours.

3.  Drain water and remove celery stalks from slow cooker.  Using two forks, gently shred chicken.




4.  Let chicken cool.  Use immediately, or put shredded chicken in a tupperware container and store in fridge until needed.

I just love having shredded chicken on hand... you can use it in all sorts of recipes!!!  This chicken is super moist and has great flavor... it's ready to go in a salad, on a pizza, in a burrito, in a wrap, etc, etc.
